JOB SUMMARY

This is a position within the Prevention Center Human Nutrition Lab (HNL). This person is responsible for working with the HNL Supervisory staff in the implementation and data collection of the individualized study diets. In accordance with established study protocols and procedures, this person will monitor participants during the dining and clinic visits. They are responsible for dietary data collection from participants and related data entry. Additional core duties include the preparation and distribution of meals to research participants.

 

SCOPE OF RESPONSIBILITIES

The incumbent works with minimal supervision and is expected to use initiative and sound judgment in carrying-out responsibilities within the framework of the department/study policies and procedures and is expected to keep abreast of changes in protocols and procedures related to work responsibilities. Assumes a lead role, assisting HNL Supervisory team in overseeing Research Cook I's, hourly Lab assistants and volunteer interns. May contribute to the work of other staff working in the HNL on all active studies as needed.

Responsibilities

  • Using a variety of computer software programs, collaborates with the HNL Manager to develop and implement the individualized study diets and monitor intake data collection.
    • Following active HNL study procedures, enters individualized study diets into ProNutra.
    • Assembles the HNL custom database in ProNutra by developing standardized nutrient composition for off-study foods, odd or unusual foods, by researching foods in NDSR or by manufacturers to match the NDSR database.
    • Produces participant feeding study documents including menu checklists for packing, food container labels, meal pick-up and dining visit logs as needed.
    • Produces food production documents including ppt flow sheets, recipes, inventory lists.
    • Collect, review and enter dietary data for the active HNL studies, follow-up with QA.
  • Maintain communication between participants, nutrition research staff and investigators.
  • Monitors study participants during dining and clinic visits as necessary.
  • Participates in the study meal production, procurement, inventory, and delivery to participants.
  • Maintain the flow of daily production activities, including prioritizing daily tasks and pulling containers for fresh weigh, pre-weigh, and recipe food items.
  • Prepare study participant food and meal packaging by labeling and organizing packaging per study and HNL protocols.
  • Prepare food and meals according to study menus, standardized recipes and instructions based on individual study and HNL protocols.
  • Set up study participants’ prepared foods for packing, serving, or delivery.
  • Assist with study supply inventory and storage including organizing and maintaining the grocery and ordering lists on a regular basis.
  • Maintains food safety and sanitation standards. Clean all work areas in accordance with established procedures. Operate and maintain equipment according to prescribed safety and sanitation standards.
  • Assist HNL Supervisory team in training new employees and volunteer interns.
  • Perform other duties as assigned.

Qualifications

A Bachelors degree in nutrition is desired but a two-year Diet Technician degree with 2 years of institutional food service experience and nutritional software experience is acceptable. Must possess a valid Washington state food handler’s permit or obtain one after being hired. Accurate record keeping and mathematical skills required. Must have knowledge of basic food preparation; nutrition and food composition. Must be proficient in the use of Microsoft Office applications, specifically MS Word and Excel or other spreadsheets and databases. Must have good interpersonal skills. Must exhibit dependability and willingness to work as part of a team.
